This Simple Hack Will Reduce The Calories In Your Rice By 60 Percent

Imagine if you could have your rice cake and eat it too?

Scientists from Sri Lanka have discovered a genius hack that'll allow you to enjoy your carbs practically guilt free.

They found that adding a teaspoon of coconut oil to the water you’re boiling your rice in can slash the number of calories in the portion by more than half.

That's 60 percent to be exact.

The trick is to add oil to the water before you cook your rice. Let it simmer for 40 minutes, then store in the fridge for around 12 hours before tucking in.

OKAY, so there's a bit of waiting around involved -- but there’s a very scientific reason.

When rice cooks, its glucose molecules begin to form tight bonds -- giving it the name, resistant starch. Now, stay with us here. Resistant starch isn’t easy for our bodies to digest, meaning that we don’t end up absorbing as many calories as we usually would.

By adding the coconut oil to the cooking process, you end up bulking up the fat molecules within the rice -- which also act as a digestive barrier.

Letting the rice cool for 12 hours helps to strengthen the bonds in the grains, in turn making them more resistant. Makes sense, right?

The study’s team leader, Sudhair A. James explains the science behind it all: “After your body converts carbohydrates into glucose, any leftover fuel gets converted into a polysaccharide carbohydrate called glycogen.

"Your liver and muscles store glycogen for energy and quickly turn it back into glucose as needed. The issue is that the excess glucose that doesn’t get converted to glycogen ends up turning into fat, which can lead to excessive weight or obesity," he said.

There is one caveat, however.

According to the NHS, eating reheated rice isn’t always such a good idea. Uncooked rice contains spores of Bacillus cereus, a bacterium that can cause food poisoning. Those spores can survive even after the rice has been cooked.

If rice is left at room temperature for too long, the spores can grow into bacteria. That bacteria then multiples and produces toxins that can cause food poisoning.

That said, there are still safe ways to enjoy rice even after it’s been stored in the fridge.

They are:

  • Ideally, serve rice as soon as it has been cooked.
  • If that isn't possible, cool the rice as quickly as possible (ideally within one hour).
  • Keep rice in the fridge for no more than one day until reheating.
  • When you reheat any rice, always check the dish is steaming hot all the way through.
  • Do not reheat rice more than once.
